Chocolate modeling paste is a combination of Chocolate and corn syrup and is a hand workable form of Chocolate to create decorations for cakes, etc.
Chocolate modeling paste is also referred to as 'Chocolate Plastic'.
Dark, Milk, or White Chocolate can be used to create Chocolate modeling
paste, and all sorts of shapes and decorations can be created from
it. Many Chocolatiers stick with straight Chocolate and will not
fall back on the more forgiving paste to keep all parts of their
creations true Chocolate through and through.
