Lecithin is usually a soy-derived emulsifier added to chocolate during manufacturing to stabilize the fats in cocoa butter and keep them from congealing and separating. Lecithin also naturally occurs in egg yolks and some vegetables. Lecithin aids in giving chocolate it’s pleasing, smooth consistency.
